Dressings

Vegan Ranch Dressing
​
Gluten-Free, Nut-Free, Dairy-Free
Ingredients:
  • 2/3 cup oil
  • 1/3 cup PLAIN soy milk or plant milk of choice
  • 1 tsp dry parsley or herb of choice or 1 tbsp fresh herbs
  • ¾ tsp garlic powder or 1 clove of fresh garlic
  • ½ tsp salt
  • 3 tsp white vinegar
  • 2-3 tsp water until desired thickness or no extra water for dip
  • Fresh ground pepper to taste

Directions:
  1. Put all the ingredients except for the water into a blender (or immersion blender).
  2. Blend for about 30 seconds
  3. Add water a teaspoon at a time, blending between each one until desired thickness.
  4. Store in an air tight container or bottle in the fridge.

Southwest Ranch Dressing
​

Ingredients:
• 1 cup Paleo mayo or mayo of choice
• 1 tablespoon water (add 1 tbsp more for a thinner ranch)
• 2 teaspoons lime juice
• 2 teaspoons apple cider vinegar
• 2 teaspoons chili powder
• 1 teaspoon onion powder
• 1 teaspoon garlic powder
• 1 teaspoon cumin
• 1/2 teaspoon dried dill
• 1/4 teaspoon paprika
• Optional: 1/4 teaspoon cayenne (or to taste)

Directions:
1. Add all ingredients to a food processor or blender
2. Blend until smooth and combined
3. Or, whisk all ingredients together into a bowl until combined well

​Sun Dried Tomato Sauce/Dressing:

Ingredients:
1/2 cup cashews, soaked*
3/4 cup sun dried tomatoes**
1/2 cup packed basil
1/2 cup + 2 tablespoons water
2 tablespoons lemon juice
salt and pepper to taste

Directions:
  • Place all ingredients in a high powered blender or food processor
  • Blend until smooth and creamy, about 1 minute.

Avocado Lime Sauce/Dressing

Ingredients:
  • 2 medium avocados (200 grams)
  • ½ cup cilantro
  • ¼ cup lime juice

Directions:​​
  • Place all ingredients in a high powered blender or food processor
  • Blend until smooth and creamy, about 1 minute.

Citrus Dressing

Ingredients:
  • ¼ cup orange juice 1 large orange
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon lime juice
  • 1 tablespoon orange zest
  • ½ teaspoon honey
  • ¼ teaspoon salt
  • 1/8 teaspoon ground black pepper

Directions:
  • In a small bowl, combine orange juice, olive oil, lime juice, zest, honey, salt and pepper. Whisk until well combined.
